Bruschetta Pomodoro

Ingredients

  • 4 cups chopped plum tomato
  • 3 teaspoons capers, minced
  • 4 tablespoons kalamata olives, chopped
  • 2 tablespoons minced red onion
  • 2 tablespoons chopped basil, or 2 tsps dried
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon balsamic vinegar
  • 1/4 teaspoon pepper
  • 1 baguette, sliced thin
  • 2 cloves garlic

Preparation

Step 1

1. Combine tomato-pepper. Cover and let stand 30 mins. Drain.

2. Toast baguette slices, rub with cut sides of garlic. Serve with tomato dip.

Notes: recipe as shown is my adaptation. Excellent. Would probably not look for another bruschetta recipe.
