Artichoke Soup

Ingredients

  • 1 large potato, chopped
  • 6 cups nonfat chicken broth
  • 13 ounces artichoke hearts, drained and diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil
  • salt and pepper

Preparation

Step 1

1. Bring potatoes and broth to boil. Cover and simmer 15 mins.

2. Add artichokes-garlic. Cook 5 mins.

3. Puree. Add basil, season. Heat through.

Notes: Very good.
