Ingredients
- 1 large potato, chopped
- 6 cups nonfat chicken broth
- 13 ounces artichoke hearts, drained and diced
- 2 cloves garlic, minced
- 2 tablespoons fresh basil
- salt and pepper
Preparation
Step 1
1. Bring potatoes and broth to boil. Cover and simmer 15 mins.
2. Add artichokes-garlic. Cook 5 mins.
3. Puree. Add basil, season. Heat through.
Notes: Very good.
