Ingredients

- 1 cup grated carrot
- 8 green olives, pitted and coarsely chopped
- 1/2 cup chopped fresh cilantro
- 1 clove garlic, finely chopped
- 1 tablespoon extra-virgin olive oil
- 2 1/2 teaspoons lemon juice
- 1/2 teaspoon ground cumin
