Bread Pudding with Broccoli

Ingredients

  • Pudding:
  • 6 c Italian bread, cubed
  • 10 oz frozen broccoli florets, drained,
  • chopped
  • 1/2 pkg meatless bacon, cooked, crumbled
  • 12 oz jar red roasted peppers, chopped
  • 1 c shredded cheese
  • 6 lg eggs
  • (2 c milk)
  • (1/2 t each salt / thyme / pepper)
  • Apples:
  • 5 apples, cored, sliced
  • (2 T butter)
  • (2 T brown sugar, 1/4 t cinnamon)

Preparation

Step 1

Spray a 2 qt casserole dish w/ nonstick spray.
Spread ½ cubed bread over bottom of dish. Next
layer ½ broccoli, bacon, peppers, & cheese.
Repeat next layer. Beat eggs, milk, salt, pepper &
thyme in small bowl and pour over contents. Cover
w/ foil; leave in fridge for 2 or more hrs. Bake at
350 F for 1 hr covered then 5-10 min uncovered to
brown.
Place the apples in another baking dish sprayed
w/ nonstick spray. Melt butter in small pan or
microwave. Add cinnamon and brown sugar to
melted butter; pour over apples. Stir well. Bake
along side casserole until apples are tender
