Ingredients
- 1 eggplant
- 1 pkg cherry tomatoes
- 1 lb pasta of choice
- 1 c grated cheese of choice
- s & p
Preparation
Step 1
1. In boiling add a generous amount of salt and then add your pasta. To do desired texture.
2. Roast the eggplant and the cherry tomatoes in the oven at 400 degrees for 30 mins.
3. Once roasted - cool it down slightly and puree in a food processor.
4. Once the pasta is cooked, add the 1/2 the cheese of your choice, then add the eggplant sauce then add the rest of your cheese, and mix.
5. Serve with the salad of choice.
