Ingredients
- 2 cups cooked chicken breast halves, diced
- 1/2 cup barbecue sauce
- olive oil
- pizza dough
- 1 cup fontina cheese
- 1/2 cup chopped tomatoes
- 1/2 cup red onion, sliced thin
- 1/4 cup cilantro
Preparation
Step 1
1. Toss chicken with BBQ sauce.
2. Shape pizza dough, brush with oil.
3. Top crust with cheese, then chicken, toamtoes, and onion. Brush edges with oil and bake. Garnish with cilantro.
Notes: This was great! Only sub was to use provolone instead of fontina - not a great sub, but no fontina to be had. Used more of everything - chicken, bbq sauce, tomatoes, and onion. And used a homemade wheat crust
Second time we made this - used gouda cheese, extra everything, and served on a black-bean pizza crust. Also roasted some corn with jalapeno, cumin, garlic, olive oil, s&p and added that to the pizza (was making for the Moosewood roasted corn guacamole). DeliScious!
