Potato Salad

Ingredients

  • 1 cup canola oil
  • 1/3 cup vinegar
  • 1/2 teas sugar
  • 1 1/2 teas salt
  • 1/2 teas dry mustard
  • 1/2 teas paprika
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped green pepper
  • 8-9 cooked potatoes

Preparation

Step 1

Mix together the first 6 ingredients to make the marinade. Put chopped onion, celery & green pepper into plastic bag. Pour the marinade into the bag and let sit over night. Drain vegetables and add to the potatoes. Mix with enough mayonnaise to coat.
