Ingredients
- 1 1/2 pounds salmon fillets
- 2 teaspoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons olive oil
- 1 onion, minced
- 12 ounces roasted red peppers, drained
- 3 tablespoons evaporated skim milk
- 1 teaspoon oregano
- salt and pepper
Preparation
Step 1
1. Mix lemon and oil. Brush over salmon. Let stand 10 mins.
2. Saute onion in oil 5 mins. Puree with peppers and oregano. Season.
3. Broil salmon. Serve with sauce.
