Ingredients
- 8 ounces kidney beans, canned, drained, liquid reserved
- 1 clove garlic, minced
- 4 flour tortillas
- 1 cup lowfat ricotta cheese
- 1/4 cup parmesan cheese
- 1/4 cup scallion, chopped
- 1 teaspoon cilantro
Preparation
Step 1
1. Heat oven to 350.
2. Mash beans and garlic. Add 1-2 tb liquid if needed.
3. Place tortillas on baking sheet. Spread beans on half of each tortilla.
4. Mix cheeses-cilantro. Spread over beans. Fold tortillas over. Bake 10 mins.
Notes: Different but really good - better than you'd expect!
