White Batter Bread

Ingredients

  • 1 pkg dry yeast
  • 1/2 cup warm water
  • 1/8 tsp ground ginger
  • 3 tbls white sugar
  • 1 can 13 oz evaporated canned milk
  • 1 tsp salt
  • 2 tbls oil
  • 4 to 4 1/2 cups unsifted flour
  • Rising time about 1 to 1 1/2 hours

Preparation

Step 1

Disolve yeast in water; add ginger and 1 tbsp sugar until bubbley.

Add remaining sugar, milk, salt and oil.

Then beat in flour gradually at low speed. Might need to mix in the last cup of flour with a heavy spoon if the mixer gets bogged down.

Grease a 2 pound coffee can and lid. Spoon in batter and seal can with lid. Wait for bread batter to rise.

When top pops off of coffee can, then bread is ready to bake.

Bake at 350° for 60 minutes. Remove bread from can and cool on wire rack. Slice when completely cooled.
