Ingredients

  • 2 tsp olive oil
  • 2 C onions diced
  • 4 cloves garlic chopped
  • 1 T grated ginger
  • 1/4 tsp red pepper flakes
  • 1 28oz can plum tomatoes
  • 1 19oz can chickpeas rinsed/drained
  • 2 C diced sweet potatoes
  • 2 C diced carrots
  • 1 C diced celery
  • 6 C vegetable or chicken broth
  • 1 cinnamon stick
  • salt and pepper

Step 1

heat oil. add garlic and onion. saute 8 minutes. add rest of ingredients except chickpeas. simmer covered 1 hour. puree till chunky.add chickpeas and heat through.
