Sprinkle chicken with salt and pepper, brush with lemon juice(lemon juice keeps the flesh white and firm) This is best with a 4-5 oz. breast.If larger it will just take a little longer to cook. If large, cut in half to serve. 4-5 oz. is a serving.
Place rib side up in a shallow pan or broiler pan. Broil quickly about 5 minutes or until brown. Turn skin side up. Cover the bottom of the pan with about 3/4" boiling water. Place chicken on a rack.
Place into a very hot oven (480@) and bake 20-25 minutes or until the chicken is tender and the skin beautifully brown and crisply puffed. The skin is so crisp you can eat the skin. An amazing and delicious recipe.
