HOT CHICKEN SALAD

Delicious and quick meal. Originally, I got this recipe from a cookbook that Dave Letterman and his mother published with his mother's recipes. I have since tweeked and tweeked it. A favorite of the RODECREW!

Ingredients
- 2 cups cooked brown rice (wheat rice is great!)
- 1 box Purdue or Louis Rich chicken strips, cut into thirds
- 1/2 cup chopped celery, optional
- 1 can cream of broccoli soup
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 1/4 cups mayonnaise
- 1 large onion, chopped
- 1/4 cup slivered almonds, optional
- 1/4 cup water chestnuts, optional
- crushed TownHouse crackers
- 1 stick butter
Preparation
Step 1
In large bowl, combine soups, mayonnaise,onion, almonds, water chestnuts, celery and chicken. Stir in cooked rice. Place in casserole dish that has been sprayed with PAM. Crush crackers to medium small crumbs. Melt butter and stir in crackers. Spread crackers over casserole. Bake at 350F for approximately 50 minutes.
