Ingredients

  • 1 lb boneless skinless chicken breast cut into small pieces
  • 2 cloves, garlic, chopped
  • 1 chopped onion
  • 2 t olive oil
  • 1 can cream of chicken soup
  • 1 can fat free low sodium chicken broth
  • 2 cans great northern beans, drained
  • 1 can green chiles, 4oz, drained
  • 1 t oregano
  • 1/2 t cumin
  • 1 big dash of cayenne pepper
  • 1 8oz bad of shredded pepper jack cheese
  • 1/4 C chopped cilantro

Preparation

Step 1

Saute chicken, onion and garlic in large stock pot w/ olive oil til chicken is done.
Add remaining ingredients except cheese and cilantro and bring to boil. Simmer 15-20 mins.
Add cheese just before serving, stir til melted.
Spoon into bowls and top w/ fresh cilantro
