- 3 T EVOO
- 2 T lemon juice
- 1 t Dijon mustard
- 1 finely diced shallot
- Salt and Pepper
- 1 small, finely diced apple
- 1 head Boston lettuce (leaves torn)
- 1 cored, thinly sliced small head of fennel
- 1/4 c crumbled goat cheese
- 3 T salted pepitas

Step 1
In a large salad bowl, whisk EVOO, lemon juice, mustard, & shallot; season w/salt & pepper. Toss in the apple. Add the lettuce & fennel & toss to coat. Top w/cheese & pepitas.
