  • 2 T lemon juice
  • 1 t Dijon mustard
  • 1 finely diced shallot
  • Salt and Pepper
  • 1 small, finely diced apple
  • 1 head Boston lettuce (leaves torn)
  • 1 cored, thinly sliced small head of fennel
  • 1/4 c crumbled goat cheese
  • 3 T salted pepitas
