    finely diced shallot

  • Salt and Pepper

    small, finely diced apple

  • 1

    head Boston lettuce (leaves torn)

  • 1

    cored, thinly sliced small head of fennel

  • 1/4

    c crumbled goat cheese

  • 3

    T salted pepitas

Directions

In a large salad bowl, whisk EVOO, lemon juice, mustard, & shallot; season w/salt & pepper. Toss in the apple. Add the lettuce & fennel & toss to coat. Top w/cheese & pepitas.
