Ingredients

  • 1 side of salmon, skin on (about 1.5lb)
  • 4 t orange zest
  • 3/4 t kosher salt, plus more for seasoning
  • 1/2 t sugar
  • 1/8 t cayenne pepper
  • 1 c Greek yogurt
  • 1/3 c orange juice
  • 4-6 t wasabi paste (4t for medium-spicy, 5t for pretty spicy, 6t for super spicy)
  • 2 scallions, sliced, plus more for serving

Step 1

1. Heat broiler w/rack set 4" from heat. Spray a baking sheet w/cooking spray. Place salmon, skin side down, on baking sheet. Mix together orange zest, salt, sugar, & cayenne & rub over salmon flesh. Place under broiler until fish begins to brown & is cooked through, about 8 min. (If it begins to char, move to a lower rack.)
2. Meanwhile, place yogurt, orange juice, wasabi paste, & scallions in a blender & puree until smooth; season w/salt. Slice salmon into 4 portions & serve w/rice topped w/wasabi sauce & scallions.
