PEACHES AND CREAM CHEESECAKE
Got this from key ingredient.. it was tasty and we needed to use up a case of peaches...

Ingredients
- CRUST
- 1 1/4 Cups Graham crumbs
- 3 tbsp. sugar
- 1/4 tsp cinnamon
- 1/4 cup melted butter
- PEACH FILLING
- 3 - 8 oz pkgs softened cream cheese
- 3/4 cup sugar
- 5 tsp cornstarch
- 4 eggs
- 1 egg yolk
- 1 tsp vanilla
- 2/3 cup whipping cream
- 1 1/3 cup finely chopped fresh peaches
- TOPPPING
- 2 medium peaches, sliced
- 1 tbsp. lemon juice
- 1 cup peach jam
Preparation
Step 1
CRUST
Combine all ingredients and press into a 9" springform pan.
FILLING
Cream cheese, sugar and cornstarch. Beat with mixer till smooth. Add eggs and yolk - one at a time beating well after each addition. Beat in vanilla. Stir in whipping cream and peaches. Pour over crust.
Bake at 350 for 10 minutes. Lower oven to 225 and bake for 70 minutes till centre no longer looks wet and shiny. Run knife around edge of pan.
TOPPING
Toss peaches and lemon juice together. Put on top of cheesecake. Just before serving, heat jam and drizzle over cheesecake.
