Asparagus and Parmesan Tart

Ingredients

  • 1 sheet thawed puff pastry
  • 1/2 lb new potatoes
  • EVOO
  • salt
  • pepper
  • 1/4 c sour cream
  • 1 c grated Parmesan
  • 1 lb asparagus, trimmed & cut into 1/2" pieces
  • 1.5 oz prosciutto

Preparation

Step 1

1. Preheat oven to 400F.
2. On a floured surface, roll the sheet puff pastry into a 16"x10" rectangle & transfer to a baking sheet.
3. Lightly score dough 1" from edges, then pierce all over.
4. Bake until puffed & crisp, 15 min.
5. Meanwhile, on a baking sheet, toss potatoes w/EVOO and salt & pepper.
6. Bake until almost tender, 10 min.
7. Spread sour cream on puff pastry & sprinkle w/Parmesan.
8. Layer potatoes & asparagus.
9. Brush w/1t EVOO & season with 1/8t each salt & pepper.
10. Bake until tart is golden, 15-20 min.
11. Meanwhile, in a lg skillet, heat 1t EVOO over high heat.
12. Add prosciutto (4 slices) & cook, stirring, until crisp, 2 min.
13. Break into pieces, scatter over tart, and serve.
