BBQ Sloppy Joes - Vegetarian

Ingredients
- 1 cup green or brown lentils (uncooked)
- 3 cups vegetable broth
- 1/4 yellow onion, diced
- 2 garlic cloves, minced
- 1 tbsp apple cider vinegar
- 1 tbsp yellow mustard
- 1/2 tbsp vegan worcestershire sauce (optional)
- 1/2 tbsp chili powder
- 1/4 tsp ground cinnamon
- 1/2 tbsp barbecue seasoning (optional)
- 1/3 - 1/2 cup barbecue sauce
- 8 slices whole-wheat or GF bread
Preparation
Step 1
Combine lentils and 2 ½ cups vegetable broth in a medium sauce pan. Bring to a boil. Lower the heat to medium-low, cover the pan, and simmer for approximately 45 minutes, or until cooked but not mushy. Once lentils are cooked, set aside. Line a skillet with a thin layer of water. Once hot, add onions and garlic and cook for approximately 8-10 minutes over medium heat until softened. Add additional water, as necessary. Stir in cooked lentils, ½ cup broth and remaining ingredients. Bring to a boil. Once boiling, lower the heat to medium-low and simmer for approximately 5 minutes, or until the sauce has thickened to your liking. Season with salt to taste. Serve on bread and enjoy.
