Holiday Biscotti

Ingredients

  • 2 1/4 C flour
  • 1 1/2 t baking powder
  • pinch salt
  • 1/2 C butter
  • 1/2 C brown sugar
  • 2 eggs
  • 1 t vanilla
  • 1/2 C dried cranberries
  • 2 T grated orange rind
  • 2 T cocoa powder
  • 2 oz white chocolate melted with 1 t vegetable oil

Preparation

Step 1

1. Heat over to 375 degrees. Grease large baking sheet.
2. Mix flour, baking powder, salt in bowl. Beat butter, sugar in second bowl til creamy. Beat in eggs one at a time. Add vanilla. Stir in flour mixture. Stir in berries and rind. Gather mixture into a ball. Divide in half.
3. Knead cocoa into half the dough. Place on prepared sheet. Roll each portion into 14 in log. Place on prepared sheet. Press dough slightly to flatten so each log is 2 in wide.
4. Bake in 375 degree oven 25 min or until lightly browned. Remove to a wire rack to cool.
5. Lower oven to 325. Cut loaves into 3/4 in thick slices. Place, cut side down, on sheet. Bake 10 minutes. Turn over; bake 10 min. Cool on rack. Drizzle with melted chocolate.
