Marinated Swordfish With Curried Nectarine Relish

Ingredients
- MARINADE:
- 1 pound fresh swordfish
- 1/4 cup canola oil
- 1/4 cider vinegar
- 2 bay leaves
- Tabasco sauce
- 1/2 teaspoon salt
- 1 teaspoon freshly-ground black pepper
- RELISH:
- 3 nectarines finely diced
- 1/2 cup finely-diced onions
- 1/4 cup finely-diced red pepper
- 1/4 cup raisins
- 1/4 cup walnuts chopped
- 1 tablespoon dried red pepper flakes
- 1/4 cider vinegar
- 1/4 cup sugar
- 1 teaspoon curry powder - (to 2)

Preparation
Step 1
Combine marinade ingredients in noncorrosive bowl, then add the swordfish. Allow to marinate for 1 to 2 hours.
Remove fish from the marinade, and grill for 4 minutes on each side. The flesh should remain slightly pink at the center. Remove from the grill and arrange on a large serving platter or individual plates.
For the Relish: Place all ingredients in glass or plastic bowl, and blend together well. Refrigerate overnight, if possible, to enhance flavor. Top fish with a little of the relish.
