Cracklins Corn Bread

When the oven, the pan and the fat are so hot that the fat actually fries the bread as you pour the batter into the skillet, you'll have the most wonderful crust in the world.

Ingredients

  • 3 tablespoons rendered bacon fat
  • 1 cup organic white cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 dash cayenne pepper
  • 2 tabeslpoons baking powder
  • 2 eggs
  • 1 1/4 cups milk
  • 2 tablespoons butter, melted
  • 1/2 cup pork cracklins (fried bits of skin and meat)

Preparation

Step 1

1. Put the bacon fat into a 9-inch cast-iron skillet. Preheat the oven to 425 degrees and slide the skillet in to heat.

2. Combine the cornmeal, flour, sugar, salt, cayenne and baking powder in a large mixing bowl.

3. Put the eggs, milk and melted butter in another bowl and mix well.

4. Stir the wet mixture into the dry mixture and mix well. Add the cracklins and stir to combine.

5. Carefully remove the hot skillet from the oven and pour in the batter. Return the skillet to the oven and bake until the corn bread is golden brown, 15-20 minutes.
