Chicken with Balsamic Honey Mustard Sauce

Ingredients

  • 1/3 cup olive oil
  • 1/3 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 1/8 cup spicy brown mustard - coarse
  • 1/8 cup honey
  • 1 tsp dried thyme
  • Sea salt and freshly cracked pepper, to taste
  • 1 garlic clove, minced
  • ! Rotisserie chicken in pieces
  • 1 package TJ Rice Medley (brown rice, black barley, red Daikon seeds) cooked in Chicken stock

Preparation

Step 1

Combine the olive oil, chicken broth, balsamic vinegar, spicy brown mustard, honey, thyme, sea salt and freshly cracked pepper, to taste, and minced garlic together. Warm in saucepan.

Place rice medley n baking dish.
Layer with chicken pieces.
Pour sauce over all.

Bake in 350 oven until warmed through.
