PEACH CUPCAKES WITH BROWN SUGAR ICING

Got this recipe from Key Ingredient when I had a case of peaches I had to use up.. these were very tasty...

Ingredients

  • CUPCAKES:
  • 3 cups flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • pinch of nutmeg
  • 3/4 cup unsalted butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1 1/2 cups buttermilk, sour cream or full fat yogurt
  • 3 large peaches, peeled, cored and chopped fine
  • ICING
  • 1 1/4 cups brown sugar
  • 1/4 cup corn starch
  • 1/2 cup icing sugar
  • 2 - 8 oz packages of cream cheese, softened
  • 1/2 cup unsalted butter
  • 1/2 tsp vanilla

Preparation

Step 1

CUPCAKES:

Mix dry ingredients.

Cream the butter and sugars beating till fluffy. Add the eggs and scraping between. Add vanilla. Gently mix in the buttermilk. Stir in the dry ingredients. Gently add the peaches. Put in 24 lined muffin tins.

Bake at 350 for 18-22 minutes. Cool before removing from muffin tins.

ICING:

In large bowl mix butter and cream cheese till fluffy. Mix brown sugar, cornstarch and icing sugar together and then add to butter mixture. Mix till frosting is smooth and light. Chill till it firms up a bit. Pipe onto the cupcakes !!
