Banana Bars

  • 1/2 cup  all-purpose flour
  • 1/2 cup  whole wheat flour
  • 1 tablespoon  toasted wheat germ
  • 1 teaspoon  baking powder
  • 1/2 teaspoon  ground cinnamon
  • 1/8 teaspoon  salt
  • 1 beaten egg
  • 1/2 cup  packed brown sugar
  • 1/3 cup  milk
  • 1/4 cup  cooking oil
  • 1/2 teaspoon  vanilla
  • 1 ripe medium banana, mashed
  • 1/3 cup  mixed dried fruit bits

Preparation

Step 1

1. Grease an 11x7x1-1/2-inch baking pan; set aside. In a bowl combine all-purpose flour, whole wheat flour, wheat germ, baking powder, cinnamon, and salt; set aside.

2. In another bowl stir together egg, sugar, milk, oil, and vanilla. Stir in banana and fruit bits. Add banana mixture to flour mixture, stirring to combine. Spread batter evenly in prepared pan.

3. Bake in a 350 degree F oven for 20 to 25 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack. Cut into bars. Makes 20 bars.
