Ingredients
- 3 tablespoons butter
- 2 pounds whole pork tenderloins -- fat removed
- salt and pepper to taste
- 1/2 cup apple jelly
- 1/2 cup Calvados
- 1/4 cup Dijon mustard
- 1 tablespoon cornstarch -- optional
- 3 tablespoons cream or water -- optional
Preparation
Step 1
Melt butter in large skillet. Saute pork until lightly browned on all
sides.. Place in 6 x 10 inch baking pan. Season with salt and pepper.
In small saucepan combine jelly, Calvados, and mustard, stirring
constantly. Pour over pork. Bake in pre-heated 325 degree oven 60 - 70
minutes, basting every 15 minutes. Cut meat into 1 1/2 inch slices.
For a thicker sauce, combine cornstarch with cream or water. Stir until
smooth. Stir into sauce and simmer until thickened.
