Ingredients

  • lb potatoes. peeled and cubed

  • 1

    red onion. Halved and sliced

  • ½

    cup snow peas

  • ½

    cup broccori florets

  • 1

    sm zucchini. sliced

  • 1

    green bell pepper. sliced

  • ¼

    cup corn

  • 2

    cloves garlic. minced

  • 1

    tsp paprika

  • 2

    tbsp fresh chopped parsley

  • cups veggie broth

  • cups cooked chestnuts

  • S & p to taste

Directions

Cook potatoes till softened. Drain and set aside. Meanwhile. cook remaining ingredients in a skillet for 10 mins. Stirring occasionally. Add cooked potatoes and cook 15. mins longer . Serve with vegan crusty bread
