Gnocchi

Ingredients

  • 1 large all-purpose potato
  • 1 egg white
  • 1/2 cup flour
  • salt and pepper
  • 1 tablespoon porcini powder -- optional

Preparation

Step 1

Boil peeled potato in salted water until very tender. Drain and dry in
oven. When dry, mash it in ricer and let it cool.

Add lightly beaten egg white and salt and pepper. Fold together. Add
flour a little at a time. Don't overwork it.

Divide in half or thirds. Roll into 1 inch round "snakes.' Cut on the
bias so the gnocchi are about an inch long.

Drop into boiling salted water or broth and cook until they float. Shock
in ice
