chestnut brown rice

Ingredients

  • 4 . Cups veggie broth
  • Brown rice
  • 1 red onion. Sliced thin
  • 2 garlic cloves minced
  • 4 oz. Cooked chestnuts
  • 2 med celery stalks. Sliced thin
  • 3 . Tbsp chopped parsley
  • 3/4 cup corn kernels
  • s & p to taste

Preparation

Step 1

Heat broth and add rice (use package instructions for rice to liquid ratio). Cook for 10 min. Stir in garlic. chestnuts. celery. parsley and corn. Season with s&p and cook 40 mine over low heat or till liquid has been absorbed
