Ingredients
- 4 medium potatoes
- 6 1/2 oz crab meat
- 1/2 cup butter
- 1/2 cup light cream
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 4 teaspoons onion - grated
- 1 cup cheddar cheese - grated
- 1/2 teaspoon paprika
Preparation
Step 1
Preheat oven to 325. Bake the potatoes.
Raise the oven temperature to 450.
Cut potatoes in half lengthwise. Scrape out potatoes & whip with electric mixer. Add butter, cream, salt, cayenne pepper, onion & cheese. Whip until smooth.
Gently fold in crab meat.
Refill the potato skins. Sprinkle with paprika.
Reheat stuffed potatoes for 15 minutes.
