Ingredients
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- pinch salt
- 3 tablespoons unsalted butter
- 1/4 cup dried fruit
- 1/4 cup sugar
- 5 ounces buttermilk
- 3 tablespoons milk
Preparation
Step 1
Preheat oven to 425 degrees.
Combine first 5 ingredients until crumbly. (Food processor works best.)
Combine dried fruit and sugar. Blend into other dry ingredients. Add
buttermilk and mix until just moistened.
Form into a ball with your hand and then pat into a flat 1/2 inch thick
"pancake." Cut into eight triangles and put on cookie sheet. Brush tops
with mlk. Bake for 10 minutes, until tops are light brown.
NOTES : I often replace the dried fruit with cinnamon or mini chocolate
chips. If I use dried cherries I will add a 1/2 teaspoon of
almond extract to the buttermilk before mixing it in.
