  • 1/3 cup sugar
  • 1 shallot -- thinly sliced
  • 1/3 cup light rum
  • 3 tablespoons fresh lime juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon lime zest -- freshly grated
  • 1 teaspoon kosher salt
  • 1 1/2 pounds shrimp (21-30 per pound, tail-on) -- peeled and de-veined
