  • 3 Thai Bird chiles minced
  • 2 tablespoons minced garlic
  • 2 tablespoons chopped cilantro
  • 2 tablespoons lime juice
  • 2 pounds large shrimp heads on
  • Salt to taste
  • Freshly-ground black pepper to taste
