CORNISH HENS WITH ORANGE HONEY SAUCE

Ingredients

  • 4 game hens
  • 2 cans chicken broth
  • 2/3 c. orange sections, cut up
  • 1/2 c. orange juice
  • 1/3 c. honey
  • 1/4 c. cornstarch
  • 2 tbsp. lemon juice
  • 1/2 tsp. grated orange rind
  • 2 c. prepared rice (any kind)

Preparation

Step 1

Wash hens inside and out. Drain, salt cavities. Mix rice with orange sections. Stuff hens loosely. Prepare sauce: combine rest of ingredients in saucepan, cook and stir over low heat until thick. Brush hens with sauce.
Roast hens at 400 degrees for 45 minutes. Brush again with sauce. Roast an additional 30 minutes (brushing again with sauce every 15 minutes).
