Ingredients
- 1 cup flour (I always use unbleached white)
- 2 Tbsp. cornstarch
- 1/2 cup powdered sugar
- 1 cup butter, softened at room temp (do not microwave it to be softened)
- 1 1/3 cup (approx.) sweetened coconut flakes
Preparation
Step 1
Mix flour, cornstarch and sugar in a separate bowl
Cream butter with mixer til fluffy. Gradually add flour, cornstarch and sugar mixure. Blend thoroughly
Chill dough for an hour or so. When it is easier to handle, using a teaspoon, scoop out about a 1/2 tsp. (you decide how big you want to make them, but smaller is best) and shape in a ball
Roll in coconut and place 1 1/2 inches apart on a cookie sheet that has been lined with parchment paper. (At this point if you want to add sprinkles you can. I use colored sugar sprinkles just to add color for Christmas cookies)
*Bake at 300° for about 20-25 minutes, or until lightly browned
Yield about 3 dozen cookies (depending on the size). (I have doubled the recipe and made between 82 and 95!)
