Ingredients
- 1 lb Penne
- 2 c silvered almonds
- 2 c chicken broth
- 2 cloves garlic
- 2 chicken breasts fully cooked - diced
- 3/4 c heavy cream
- Salt and pepper to taste
- Lemon Zest
- 1/2 c peas
- some basil
- 1 c Parmesan cheese
Preparation
Step 1
1. A big pot of water comes to a boil - salt the water and add the salt and penne.
2. In a food processor add the almonds, chicken broth and garlic - add to skillet on med-high. Simmer til slightly reduced.
3. Add the chicken and 3/4 c of the heavy cream - let this come to a simmer then add the frozen peas.
4. Once the pasta is cooked to your desired liking - add 1/2 your Parmesan cheese to the hot pasta and toss. Now toss in your cream sauce - toss. Add the rest of the cheese. Toss.
5. Salt and pepper to taste - add fresh basil before serving.
