Ingredients
- 1 Large Sweet Potato (or equivalent in Parsnips), peeled and cubed
- 1 Medium Yellow Onion, chopped
- 5 Carrots, sliced
- 1 Bell Pepper (any color), diced
- 1-1/2 lbs Grass-Fed Beef Stew Meat, cut into bite-size pieces
- 3 cups Beef Broth
- 2 tsp Oregano
- 1/4 tsp Smoked Paprika
- 1 tsp Dried Parsley
- 1/2 tsp Sea Salt
- 1/8 tsp Fresh Ground Black Pepper
- 1 Tbsp Paleo Worcestershire Sauce

Instructions
Brown the stew meat in a skillet over medium-high heat. Don't cook it all the way through, just brown it on the outsides.
Place stew meat and all other ingredients in the crock pot, mixing to combine.
Cover and cook on LOW for 8-10 hours.
