One Bowl Zucchini Muffins

Ingredients

  • 1/2 C butter, melted
  • 1/2 C brown sugar (you could also use coconut sugar in place of the brown and white sugar)
  • 1/4 C sugar
  • 1 large egg
  • 2 tsp vanilla
  • 1 1/2 C wheat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 medium banana mashed
  • 1 1/2 C grated zuchinni

Preparation

Step 1

1. Preheat oven 350 degrees.
2. Melt butter. Add to the melted butter sugars, egg, vanilla, and stir the mixture to combine.
3. Spoon the flour into your measuring cups and level it off with a knive. Add the flour to the top of the wet mixture. Add the baking soda, and cinnamon on top. Stir together.
4. Fold in the zuchinni and the mashed banana.
5. Pour into muffin liners. I filled them 3/4's full. Bake for 15-18, perhaps longer.
