Broiled Field Mushrooms with Garlic and Chili

Ingredients

  • 3 tbsp butter, softened
  • 1 garlic clove, crushed
  • 1-2 small red chilies, finely chopped
  • 4 tbsp finely chopped Italian parsley
  • 4 large portobello mushrooms
  • 4 slices thick ciabatta bread
  • tomato chutney or relish, to serve
  • creme fraiche, to serve

Preparation

Step 1

Mix together the butter, garlic, chilies, and parsley, and spread some of the mixture over the inside of each mushroom. Season well with salt and pepper.

Heat the broiler to medium and line the base of the broiler tray with foil. Broil the mushrooms for about 8 minutes, or until cooked through.

Toast the bread, spread some tomato chutney on each slice, then top with a mushroom and serve immediately with a dollop of creme fraiche.
