Fried Halloumi, Tomato, and Arugula Sandwiches

Ingredients

  • 1 lb halloumi cheese, thickly sliced
  • 1 tbsp finely shredded preserved lemon, or finely shredded lemon zest
  • 2 garlic cloves, crushed
  • 1 tbsp roughly chopped capers, rinsed and squeezed dry
  • 1 tbsp EVOO
  • 8 thick slices sourdough bread
  • 4 tomatoes, thickly sliced
  • 1 handful arugula
  • 1/4 cup butter

Preparation

Step 1

Put the halloumi in a nonmetallic dish. Whisk together the lemon, garlic, capers, and olive oil, and pour over the halloumi. Toss well, then divide the cheese among four slices of bread. Top with the tomatoes and arugula, and season generously with the salt and pepper. Sandwich with the rest of the bed.

Melt the butter in a large skillet and cook the sandwiches over medium heat until the bread is crisp and the cheese is soft. Serve immediately.
