Ingredients
- 2 onions, chopped
- 4 chicken breasts
- 1 4oz can chopped mild green chile peppers
- 3 cans diced tomatoes with green chiles (low sodium)
- 2 cans mild red enchilada sauce
- 4 cloves garlic, minced
- 25-30 oz chicken broth (low sodium)
- 1 Tbls taco seasoning (low sodium)
- 20 oz frozen corn
- 1 can black beans, drained and rinsed
- 1 bunch cilantro, chopped
- Serve with corn muffins and fruit.

Preparation
Step 1
Placed chopped onion in the bottom of the slow cooker. Layer frozen chicken breasts on top. Add all other ingredients. Cook on high for 6-8 hours.
