Chicken Tortilla Soup

Ingredients

  • 2 onions, chopped
  • 4 chicken breasts
  • 1 4oz can chopped mild green chile peppers
  • 3 cans diced tomatoes with green chiles (low sodium)
  • 2 cans mild red enchilada sauce
  • 4 cloves garlic, minced
  • 25-30 oz chicken broth (low sodium)
  • 1 Tbls taco seasoning (low sodium)
  • 20 oz frozen corn
  • 1 can black beans, drained and rinsed
  • 1 bunch cilantro, chopped
  • Serve with corn muffins and fruit.

Preparation

Step 1

Placed chopped onion in the bottom of the slow cooker. Layer frozen chicken breasts on top. Add all other ingredients. Cook on high for 6-8 hours.
