Ingredients
- 2 Cups Orzo
- 6 Scallions, chopped
- 2 Cups Chicken broth
- Handful of fresh parsley, chopped
- Handful of fresh dill, chopped
- Salt & Pepper to taste
- 1/4 Cup grated parmesan
Preparation
Step 1
Cook orzo in salted boiling water until al dente, about 8 minutes. Cook chopped scallions white parts in a skillet with olive oil until tender, about 2 minutes. Stir in the orzo, chicken broth, the scallion greens and the parsley & dill, season with salt and pepper. Simmer until slightly thickened, about 3 minutes. Stir in the grated parmesan cheese.
