Jello Cake

The original recipe that Opal Dunbar, Opal Lee Combs and Becky Dunbar used to make. I'm guessing it came from the Jell-O box.

Ingredients

• 1 cup boiling water
• 1 package lemon jello
• 1 package yellow cake mix
• 3/4 cup oil
• 2 teaspoons lemon flavoring
• 4 eggs - 2 at a time
• 2 cups confectioner's sugar
• 2 lemons
• 2 tablespoons lemon rind

Preparation

Step 1

Set Aside:

Boiling water and jello; mix together.

Mix together:

Cake mix, oil, lemon flavoring and eggs (2 at a time).

Pour jello in the mixture and beat well. Grease and flour 10 x 15 inch pan. Bake in 350 degree oven for 40 minutes.

Remove cake from ocen and prickcake with ice pick. Spoon icing over the cake.

Icing:

Mix confectioner's sugar, juice from lemons and lemon rind.
