ROLL UP CREAM CAKE

Ingredients

  • FILLING:
  • 3 eggs
  • 1 C sugar
  • 1/3 C water
  • 1 tsp vanilla
  • 3/4 C flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 8 oz. pkg. Cool Whip
  • 2 Tbsp powdered sugar
  • 2 C sliced fruit, strawberries

Preparation

Step 1

Preheat oven to 375 degrees.
Grease and flour jelly roll pan. Beat eggs on high speed for 5 minutes in a small mixing bowl with an electric mixer. Pour into a larger mixing bowl. On low speed, very gradually beat in the sugar, water and vanilla. Add flour, baking powder, and salt. Beating just until smooth. Pour into pan and bake for 10-14 minutes until done and very lightly brown. Loosen cake gradually and dump on a powdered sugar towel. Roll up in towel. Chill in refrigerator for 20 minutes. Remove and unroll. Spread with filling. Roll back up. Chill until ready to serve.
