Spicy Teriyaki Glazed Salmon W Cucumber-Green Onion Relish

  • GLAZE:
  • 1/4 cup mirin
  • 1/4 cup sake plus
  • 3 tablespoons sake
  • 1/4 cup dark soy sauce plus
  • 3 tablespoons dark soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon freshly-grated ginger
  • 3 garlic cloves finely chopped
  • 1 fresh red Thai chili finely chopped
  • 4 salmon fillets - (6 oz ea)
  • Salt to taste
  • Freshly-ground black pepper to taste
  • 1 large cucumber peeled, diced
  • 1/4 cup finely-sliced green onion
  • 2 tablespoons rice vinegar
  • 1 tablespoon peanut oil
  • Salt to taste
  • Freshly-ground black pepper to taste


Servings 4


Step 1

Combine all glaze ingredients in a small saucepan and bring to a boil. Remove from heat and let cool.

Preheat grill.

Season the salmon with salt and pepper to taste. Grill for 3 to 4 minutes on each side. Brush with the glaze during the last 1 minute of cooking. Serve with the cucumber-green onion relish.

Combine cucumber, onion, vinegar and oil in a small bowl and season with salt and pepper to taste. Let relish for sit 30 minutes.

This recipe yields 4 servings.
