Meatballs with Sauteed Veggies

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped (1 1/2 c)
  • 2 carrots, grated (1 c)
  • 3 cloves garlic, minced
  • 1/2 C dry white wine
  • 2 pt cherry tomatoes, halved (1 1/4 lb)
  • 1 lb frozen fully cooked turkey, beef, or vegetarian meatballs
  • 1 bunch (10 oz) kale, tough ribs removed and leaves coarsely chopped

Heat oil in large skillet over medium heat. Add onion and carrots and cook, stirring, until softened, about 4 minutes. Add garlic and cook 1 minute. Pour in wine and simmer until reduced by half, about 2 minutes.

Add tomatoes. Cook over medium-high heat, stirring occasionally, until tomatoes have broken down, about 6 minutes.

Stir in meatballs and top with kale. Cover and simmer, stirring occasionally, until meatballs are heated through and kale is tender, about 20 minutes.
