Cottage Cheese Pancakes

Ingredients

  • 4 egg whites
  • 2 egg yolks
  • 1 C. cottage cheese (can use low fat)
  • 2 Tbsp oil
  • 1 ½ C. regular uncooked oatmeal (can use instant oats)
  • 1 tsp. Vanilla
  • 2-3 Tbsp. water (I used 2)

Preparation

Step 1

Place all ingredients in blender and blend until smooth.
Add water as needed to thin
Drop by ¼ cupfuls onto preheated griddle
